Brewed at Scourmont Abbey in Belgium. The registered trademark "Trappist" certifies that the ale was brewed within the walls of an existing Trappist monastery under the control of the Trappist community. The monks use a major part of the sales revenue to support charitable works. Chimay blue is the heavier of the trio, with a stronger character and 9% abv. The head is moderate with loose bubbles which dissipates fairly quickly. Cloudy chestnut brown pour with fine sediment and high carbonation. Nose is slightly fruity with sweet bread aroma. Plum and raisin are balanced by malt richness. Caramel and molasses undertones without being too sweet. Medium mouthfeel with an alcoholish finish. Highly complex ale but still has that sweet funk which takes getting used to.

Dark rich wheaty not overly hopped. Has a touch of malt and barely. Good beer on a cool day.

Can't disagree with the folks who rave about this. Quite a Belgian, bold but not too much edge. Quite bubbly, which doesn't bother me.

High carbonation Smooth and light in taste. Dark chocolate taste with hints of Vanilla bean
