Tastes like mad Tom IPA but less hopy

brought in a nuanced complexity and balance through the oaky, vanilla, woody, sweet notes that tempered the piney and citrusy hops. Originally, I found the non-barrel aged version of this IPA to be fairly complex on its own with a nice citrus-lingering finish that never approached astringency yet made its character known, but this just topped that with a deeper complexity and nuance of all of the flavours - as if each sip could emphasize different aspects: the oak, the pine, the citrus, while the woody vanilla notes and citrus hops seemed to complement each other in a way I had never imagined possible. Very enjoyable! Grade: A-
